Put sugar in a sterilized glass bottle, put quince, put quince, put quince, put it over and over again, leave as much sugar as you want to cover the top, and mix all the prepared sugar.

Cover with an air-borne cloth.
While it's ripening, don't close the lid and put it on top
After about a month or so, it's good to move it to a disinfected glass container and make it into warm quince tea throughout the winter.
