Blanch sugar and vinegar in boiling water and put legs first. Vinegar improves color and sugar improves octopus's soft texture. If you add octopus before the water boils, it'll get tough and peel off Please be careful.
STEP 6/7
It's not that big because it's a stone octopus, so I blanched it without boiling it.
You have to boil the big ones.
Rinse quickly with cold water, drain and cool.
