Sweet and sour pork with dried yellow corvina
Fresh dried yellow corvina came in as a gift, so I made sweet and sour pork for the first time in a while. Crispy dried yellow corvina and sweet and sour hot water sauce go well together.

Cooking Steps
STEP 1/5
Remove the vinyl from the yellow corvina and remove the internal organs. I put a wooden chopstick in the gills like that and gently spin it to remove the internal organs. (But don't spin it too hard.). The flesh of the yellow corvina is torn.) Or you can just cut the stomach with a knife and remove the intestines. Remove internal organs and rinse thoroughly to remove moisture. After removing the internal organs, place the knife on both sides like that and cut it a little deep. Season it with the seasoning ingredients (both front and back) and marinate it. Don't forget to flip it over once.

Chop green bell peppers, carrots, and green onions, and grind cucumbers. Soak wood ear mushrooms in water and wash them thoroughly and shred them. Chop the garlic and ginger like that.

Grease a heated frying pan with oil, first add garlic and ginger to make it taste good, then stir-fry vegetables except green onions. Add green onions and stir-fry them. Make the hot water sauce according to the amount of ingredients, stir slowly, and turn off the heat when it thickens.

Wet the dried yellow corvina with a kitchen towel and coat it with starch powder. Apply starch powder to the area where you cut it. Now fry the yellow corvina coated with starch in a fryer. Fry it crispy, please.

The crispy fried yellow corvina was lightly de-greased, placed on a plate, and sprinkled with hot water sauce. Bring the hot water back to a boil and sprinkle. It looks a bit complicated, but if you make it, it's a great dish
