STEP 1/3
Add olive oil and stir-fry shiitake mushrooms and onions over high heat for about 5 minutes. A little moisture is evaporated by stir-frying quickly, but some water is generated due to the strong moisture of onions and mushrooms. But stir-fry it for about 5 minutes with that heat and season it with soy sauce. Or the mushrooms will be squeezed by eating soy sauce. To prevent this, blanching mushrooms slightly is one way, but I just did it to make it fast and simple.
STEP 2/3
By the time the onions are almost cooked, it means that stir-fried shiitake mushrooms are ready. If you season it with soy sauce or salt, it becomes a delicious side dish for dinner without any seasoning. Sprinkle sesame seeds and add sesame oil and stir-fry it again to make it a delicious side dish. Don't forget to stir-fry minced garlic, too.
STEP 3/3
This is a simple dinner side dish, stir-fried shiitake mushrooms.
It's good to blanch and cut it slightly for a clean side dish, but for a quick dish, you can just slice it thinly and make a side dish. I think it does get a lot of moisture. To prevent moisture, stir-fry it over high heat for a short time.
