STEP 1/7
Fresh webfoot octopus was cleaned with baking soda and a spoonful of salt.
There was ink and mud on the sucker, so he wiped it really hard.
STEP 2/7
The cleanly trimmed webfoot octopus was marinated for about 30 minutes with olive oil, garlic, pepper, cooking wine, and plum extract.
STEP 3/7
While the webfoot octopus was marinated, they made the sauce.
I put red pepper paste, red pepper powder, garlic, cooking wine, sugar, and soy sauce and marinate it for about 30 minutes.
STEP 4/7
I added soaked shiitake mushrooms, but if there is no soaked shiitake, I think you can add a handful of raw shiitake mushrooms.
STEP 5/7
After seasoning the jjukumi, they put it in the refrigerator for about 5 hours.
STEP 6/7
If you put pepper oil in a preheated pan and stir-fry it, it's done...
I sometimes use chili oil when I cook, but it tastes better with chili oil.
STEP 7/7
Stir-fried webfoot octopus or squid should be stir-fried over high heat to avoid too much water. Or you can add a bit of starch. If you don't like this, you can parboil it. Choosing a pot is also important.
