Fry the egg garnish, shred it, and make the sauce with the amount of seasoning ingredients in advance.

Stir-fry boiled glass noodles with oil in a pan and season the glass noodles with 1/3 of the sauce. Grease another pan with oil and stir-fry onions and carrots. When onions become transparent, add shiitake and enoki mushrooms, add half of the remaining sauce and season.

Lastly, add the glass noodles, add the remaining seasoning, stir-fry evenly, and then add sesame oil to finish.
