*When choosing burdock, avoid being too thick or thin. The strong and hard roots are fresh, and the dry or withering of the soil in the shell is wick-forming and tasteless.
*If you leave the skin peeled, it will turn dark, so soak it in vinegar water as soon as you prepare it.
