Scrape off the scales of gizzard shad, remove the fins, tails, daggers, and intestines, and wash them clean under running water. The fins and tails of gizzard shad can be easily removed using kitchen scissors.

Scoop the gizzard shad and cut it into appropriate sizes. I removed the thick thorns of gizzard shad to make it easier to eat.

Place gizzard shad in a bowl, sprinkle with cooking wine, salt and pepper, mix well, and marinate in the refrigerator for about 30 minutes.

Put marinated gizzard shad in a disposable sanitary bag and shake it to coat it with frying powder. If you use a sanitary bag, it's good because there's no frying powder on your hands.

Pour frying powder and water into a bowl, knead it, add ice cubes, and add fried gizzard shad to coat it with frying clothes. If you use ice in fried dough, you can taste crispy fried food.

Pour cooking oil into a heated frying pan, and when the temperature rises, add fried gizzard shad and fry until golden brown. If you drop a few drops of dough and come up right away, the temperature of the frying is just right. Place the fried gizzard shad on a plate and drain the oil.
