Boil peeled peas in boiling water with a spoonful of salt for about 10 minutes.

Rinse well-boiled peas in cold water and drain.

Put sugar and water in a thick pan and when the sugar water starts to boil over high heat

Add the boiled peas and simmer over medium heat. It's good to stir-fry it with a spatula from time to time. When cooking with water, it is important to control the heat. If you cook it quickly over high heat, the taste and color of the food will never come to life. I always cook the stew slowly by lowering the heat to medium low once it starts to boil.

The sugar water was cut down on the peas and it became small. The sugar water can be a little too small to your liking, but I boiled it down.
