Cooking Steps
STEP 1/16
Cut and tear various mushrooms into bite-size pieces
STEP 2/16
Wash spinach thoroughly, cut off the top and separate spinach one at a time
If you separated one by one, rinse it again. Spinach has more soil than you think
STEP 3/16
Put spinach in boiling water and blanch slightly~~
STEP 4/16
Put it in cold water right away When you boil spinach for a long time, the color doesn't come out this green and it has a brown color
STEP 5/16
Hold it tightly with both hands to remove as much moisture as possible
Add a little salt and sesame oil to the spinach and season it first
STEP 6/16
Add 2TS of miso sauce, 1ts of red pepper paste, 1TS of oligosaccharide, 1TS of sesame oil, 1ts of oyster sauce, and a little pepper to 100cc of boiling water and boil until the sauce is concentrated. When the concentration comes out, put it on a plate and cool it
STEP 7/16
When the sauce is done, stir-fry the three mushrooms in order
STEP 8/16
Season it with salt and pepper and stir-fry it quickly over high heat
STEP 9/16
Stir-fry in the same way as saesongi
STEP 10/16
Stir-fry shiitake mushrooms with a bit of pepper and soy sauce I used raw shiitake mushrooms, so I added soy sauce later If you want to use dried shiitake mushrooms, soak them in water, remove moisture, mix them with soy sauce and sesame oil, and stir-fry them
STEP 11/16
If you prepared three kinds of mushrooms, you prepared all the ingredients When the ingredients are ready, you can boil the kalguksu before you finish
STEP 12/16
Boil raw kalguksu in boiling water The kalguksu is thick, so you have to boil it for more than 5 minutes. You can find out if you eat the noodles a little by little Uncooked noodles taste like flour It's the right time when you can't feel the taste of flour
STEP 13/16
When cooked properly, transfer the kalguksu to cold water and cool it down
STEP 14/16
Place blanched spinach on a plate and top with cold noodle and stir-fried mushrooms Please prepare the chilled miso sauce
STEP 15/16
Place cold noodle noodles and stir-fried mushrooms one by one Please prepare the chilled miso sauce
STEP 16/16
You can pour the miso sauce over the noodles and mix it~~^^
