Making Mocha Roll Cake Full of Coffee Scent
I made a mocha roll cake with a subtle coffee scent.

  • Soft flour

  • Eggs

  • instant coffee

  • Butter
    20g
  • Milk

  • whipped cream
    150g
  • Sugar

Cooking Steps
STEP 1/6
Separate the egg whites and hand mix them back. When the egg whites are melted, add sugar three times and whip until horns form.
STEP 2/6
Add the yolk back in, lightly turn with a hand mixer, then add the sifted flour and mix quickly.
STEP 3/6
Give coffee, milk, and butter a medium bath, and mix the batter in the medium bath, then add to the main dough and mix again.
STEP 4/6
Place the dough flat on a parchment pan. Beat in pan about 3 times and bake in preheated oven at 180 degrees for 10 minutes.
STEP 5/6
Add sugar to the whipped cream and whip it, then add the pre-melted coffee water to make the whipped cream.
STEP 6/6
I made syrup with 60g of water, 30g of sugar, and 2TS of coffee. Apply it on the sheet that you made and apply the mocha cream that you prepared, roll it up, wrap it with parchment paper, and harden it in the refrigerator for 1-2 hours.
