STEP 1/6
In a pot, 23 cups of water, 35 anchovies for soup. Five pieces of kelp. Add 1T and a half of pepper seeds, and when it boils over high heat, reduce it to medium heat for 10 minutes
Prepare 16 and a half cups of broth by filtering through a fine sieve after boiling.
Pepper seeds can be omitted. You can add a piece of Cheongyang red pepper instead of pepper seeds. Usually, Seonji Hangover Soup is made with beef bone broth.
There's not much beef bone broth at home. So I added anchovy kelp stock. If you have beef bone broth, add beef bone broth..
STEP 2/6
Cut the bottom of the frozen cabbage and wash it, put salt in boiling water, blanch it for about 5 minutes, rinse it in cold water, and then put the frozen cabbage in cold water
Soak it for about 10 minutes. (You have to blanch it like this and soak it in cold water to prevent the smell of green.)
When I squeezed it by hand after soaking it in cold water, it was 3 handfuls.
Cut it into big pieces and put it in a bowl
Soybean paste 1T. Minced garlic 1T+1/4T. Pepper powder 3T. Soup soy sauce 2T. Season with sesame oil 1/2T.
STEP 3/6
I bought the beef brisket for the soup. Put it in a bowl
Minced garlic 1T. Pepper powder 2T. Soup soy sauce 2T. Sesame oil 1T. Cooking wine 3T. Add a small amount of pepper powder and marinate for 10 minutes.
Wash 2 handfuls of bean sprouts and prepare them. Cut 1 green onion into big pieces.
Cut the radish into pieces.
STEP 4/6
It's Seonji. Buy beef Seonji. Make sure to buy something fresh and bright red. Shower the purchased paper in cold water.(Removal of blood)
When the water boils in a pot, add 1/2 cup of soju and add the paper.
In this state (in boiling water), when the surface of the paper turns black and begins to harden, use a wooden spatula to make a large chunk
Please turn it off. And then boil it for 5 minutes. (You don't have to boil the inside of the seonji well.)~)
Boil it for 5 minutes, shower it in cold water, and drain it.
There are people who put in the raw ox blood when making ox blood hangover soup, but it smells and the color is murky. It's good to blanch it slightly and put it in.
STEP 5/6
All the ingredients are ready now. All you have to do is boil it..
Put the seasoned beef and radish in a large pot and stir-fry it over medium heat for about a minute, then prepare anchovy kelp stock and seasoned cabbage
Add blanched paper and turn it on over high heat. (I'm going to open the lid from top to bottom and boil it~)
When it boils over high heat, reduce it to medium heat and boil it for 15 minutes, then green onion.Add bean sprouts, salt 1T + 1/3T and fish sauce 2T half. Add 1T of red pepper powder
Please boil it for five more minutes..
Remove the foam from time to time. You can add pepper powder to your preference at the end.
STEP 6/6
Adjust the amount of salt according to the salty level of the soy sauce..Adjust the amount of red pepper powder to your liking. If you enjoy eating thick, you can boil it more deeply. You can bring chopped green onions or chopped cheongyang peppers.
When boiling the stock, open the lid of the pot and bring to a boil.
