Making Earl Grey Raw Chocolate
Raw chocolate is made by hardening ganache and rolling it in cocoa powder. It doesn't need tempering, so it doesn't need much tools and it's pretty simple to make. If you mix earl grey, it becomes earl grey raw chocolate.

Ingredients
  • whipped cream
    130g
  • Dark chocolate
    200g
  • cocoa powder
    20g
  • Butter
    30g
  • black tea
    2spoon
Cooking Steps
STEP 1/9
Remove butter to room temperature beforehand. If it's a block type, mince it in advance and prepare it. Leave the buttoned style intact. Measure dark chocolate in a bowl and set aside.
STEP 2/9
Mix whipped cream and earl grey in a pot and bring to a boil over low heat. smell
When the edge of the rain boils, get off the fire and take about 5 minutes!!
Let stand until earl grey is enough. (Photo taken about 5 minutes before boiling) The Earl Grey I used didn't smell that strong on its own. So I put in 10 grams of rice spoon, which is about 2 spoons. If you have dark earl grey, you can add less than 10 grams.
STEP 3/9
If earl grey is enough, strain the chocolate you prepared earlier and pour the whipped cream. Mix the whipped cream so that it melts well. I don't think it's going to mix well because the whipped cream got too cold!! You may do that. If the whipped cream is too cold, heat it over low heat! There is a way to double-hot chocolate.
STEP 4/9
When the chocolate is moderately melted, add the butter at room temperature and gently mix.
STEP 5/9
Pour chocolate into a container and wrap it on top! Let it harden in the refrigerator for about 2 hours. If you're going to make pav chocolate, lay the wrap in a square container, pour the chocolate, and harden it a little. If you're going to make truffle chocolate, you don't have to put a wrap on it, but it's more comfortable to put a wrap on it. You can use it by scratching the chocolate completely. I'm going to use a spoon to scoop up the truffle, so make sure it's not too hard.
STEP 6/9
If you cut it into squares and roll the cocoa powder, it becomes pav chocolate.
STEP 7/9
If you make a circle with your hands, it's truffle chocolate. You use a lot of chocolate parchment paper when you give presents, right? If you want to fit that size, about 13 to 14 grams of truffle chocolate is the best.
STEP 8/9
Measure 13 grams each and roll the round chocolate into the cacao powder, and that's it!!!!! It may take some time to harden, but I think raw chocolate is too easy and simple.
STEP 9/9
I put them neatly in a cold bowl and put them on the veranda.
If you're going to make pav chocolate, lay the wrap in a square container, pour the chocolate, and harden it a little.
