Cooking Steps
STEP 1/3
In order to reduce the amount of sugar, 4T of raisin soaked water was added little by little to water the non-glutinous rice powder. The amount of water varies depending on the condition of the non-glutinous rice powder, so if there is no crack when you hold it with your hands while checking the condition, watering is done. After watering, sift the non-glutinous rice powder about three times. Add 3T of sugar and dried raisins to the rice powder that has been sifted and mixed.
STEP 2/3
Put water on a steamer in advance and put the non-glutinous rice powder evenly on a rice cake mold. Steam it for about 20 minutes in a steaming steamer and let it slow down for about 10 minutes.
STEP 3/3
Wait a minute!! When the rice cake frame is separated, the rice powder in the part that touched the rice cake frame is blown away. There are two ways to prevent rice powder from flying, one is to steam the rice cake for about 10 minutes and then separate the rice cake mold, and one is to apply a little oil inside the rice cake mold, sprinkle sugar, and fill it with rice powder. As a result of doing both, applying oil and sprinkling sugar will definitely catch the flying rice powder.
- Prepare the frozen non-glutinous rice powder by defrosting it 2-3 hours in advance. - Soak raisins in water beforehand. If raisins are used without soaking, raisins may eat moisture while making rice cakes, and the rice cakes may lack moisture. - If you put the non-glutinous rice powder through a sieve several times, a more chewy Baekseolgi is completed. - Usually, 4C of non-glutinous rice flour adds 4T of sugar, but since the amount of sugar is reduced and watered with raisin soaked water, the amount of sugar is up to your taste
