In a bowl of strong flour, place sugar, salt and instant dry yeast out of contact with each other, add water, knead for about 5 minutes, and make a clean lump. Add butter at room temperature and knead until smooth.
STEP 3/6
Remove the gas from the dough, circle again, and let it ferment for 15 minutes. Push the dough with a rolling pin to drain the gas and connect both ends together in the middle.
