Cooking Steps
STEP 1/4
Stir in the cold white separated from the yolk and add 40g of sugar and make a firm meringue. It is easier to make meringue in advance and put it in the refrigerator. Add 40g of sugar and salt to the yolk and whip until ivory.

Whip little by little with warm milk, honey, starch syrup and mirin. Add 1/3 of the meringue to the yolk.

STEP 4/4
Pour the finished dough into a mold, strike it twice to remove air bubbles, clean the top, bake it in an oven preheated to 170-180 degrees for 10 minutes, lower the temperature to 150-160 degrees, and bake it for 25~30 minutes.
