Add the sifted rice powder (90g) and baking powder (3g) to the egg and gently mix with the ball rolling. Don't mix it too much. Just a little bit.

Continue to mix, spilling the melted butter (80g) little by little in the middle or microwave beforehand. If you mix it all, butter will go in and the dough will feel smooth.

Since there is no parchment paper in this mold, you have to put butter on the mold so that you can take it out in a pretty shape when you take it out. Brush with butter and spread evenly over mold. Don't be so discouraged because you don't have a maple frame. You can just bake it in a madeleine mold. You can bake it in a muffin frame. You have to adjust the baking time according to the amount of dough in the mold.

Place 80% of the dough in a well-buttered mold. I think it was just as good as the picture. And there's some dough left, so I was going to pour it into the maple frame little by little. The silver foil baking cup is deeper than the maple mold, so you have to bake it for 30 to 40 minutes. Bake for 20 minutes in a preheated 180 degree oven. If you poke it with a skewer or chopstick and nothing comes out, you can take it out.
STEP 11/11
Maple madeleines that were baked in exactly 20 minutes. I tried to poke it to the side not to get caught in the skewer test this time, what do you think? You can't tell, right? I left it in a mold for about 5 minutes, took it out, cooled it off in a cooling net, and packed it. It's a good texture to have with a hot coffee. And it's not too sweet, so it's even better.
