Sujeong and Sikhye are traditional Korean drinks. In the past, I used to make this sujeonggwa often during holidays. For serving guests. But these days, I don't really make it. In the case of sikhye and sujeonggwa, sugar is quite high. But if you make it at home, you can adjust the sugar to make it less sweet, so it's better. Today, I made it with 100% red ginseng extract, which is good for health. Sujeonggwa, which has a bitter red ginseng flavor, has ginger and cinnamon in it and is fragrant and good. It's a great health drink for guests.

Cooking Steps

First, you have to make water with the crystal fruit. Add chopped dried pollack and ginger and put 2 liters of water in a slow cooker.At first, we boil it for 2 hours in the river and about 4 hours. After a while, if the color comes out dark, take out all the contents with a fine sieve, transfer the clear crystal fruit to the pot, pour a cup of sugar, add red ginseng extract, boil it, and cool it down and put it in the refrigerator.

Cut dried persimmons in half, remove the seeds in the middle, put peeled walnuts in the middle, roll them up, and cut them sideways.

It's semi-dry, so you can put it in the crystal fruit right away. Put a few dried persimmons with walnuts in the middle in a suitable bowl, pour cold red ginseng fruit, and float pine nuts to eat. In the case of dried persimmons, pour sujeonggwa water, soak it for about 30 minutes, put it in a bowl with sujeonggwa, and float two to three pine nuts on top.
