My oldest child is on kindergarten vacation, so we made snacks together. I made muffins with vegetables and almonds in the refrigerator I had fun making it while singing Muffin Man's song

  • Eggs

  • Soymilk
  • Potato

Cooking Steps
STEP 1/8
Blanch finely chopped potatoes and onions in boiling water.
STEP 2/8
Prepare cooked potatoes-carrots, raisins and sliced almonds.

I put melted butter sugar in a bowl, mixed it evenly, melted it, and mixed the eggs together.

Sift together flour, baking powder and vanilla.
STEP 5/8
Add half a cup of soy milk and mix evenly.
STEP 6/8
Lastly, add the prepared vegetables and mix them again. You can make the dough thick. You can adjust the level with soy milk and soft flour.

Put about 2/3 of the ingredients in a muffin mold and put the remaining ingredients on top.
STEP 8/8
I baked it in a 180 degree oven for about 25 minutes.
