Wash the chives clean.. Wash the mussels, too.

Add water and salt to flour and stir well to dissolve.Organic flour is a bit dark in color.

Cut the chives 3 to 4 times, shred the carrots, chop the mussels a little, put them in the flour dough, and mix them well.

The amount of ingredients should be higher than the amount of flour to make a delicious pancake. Don't put too much flour because it just serves to mix the ingredients well.

Grease the pan with plenty of oil, place the dough, and use a fritter tender to push the edge of the pancake inward to form a round shape.
That way, the pancakes are clean.

Let stand on medium heat until the former top is stiff. If you flip the pancake too early, it's easy to tear and doesn't look delicious because it doesn't have a color. I always cook the bottom part well and turn it over only once so that I don't eat a lot of oil.
STEP 7/7
After turning the pancake upside down, press the top side down with a spatula. Jeon tastes better when it's thin. The oil in the chives pancake was too low.
